The dietary information given at the end of the recipes is for the whole dish. One reader mistakenly thought this was for a serving size and I apologize for lack of clarification. The book only gives dietary information for the whole dish as people and members of their family have differing dietary requirements and preferences. I believe serving sizes need to be flexible to suit the wants and needs of people and their family. The need for both specifics and flexibility has led me to only include dietary information for the whole dish. People with diabetes are encouraged to adjust their portion sizes so that they do not consume more than the recommended amount of carbohydrate for each meal as set by their clinician.
